After years of beverage consulting, I've noticed the same gaps keep showing up on menus. Here are five things your beverage menu might be missing — and how to fix them.
1. A signature seasonal drink
Seasonality signals freshness. Rotate at least one cocktail or mocktail with the seasons to keep regulars coming back.
2. Robust non-alcoholic options
This is no longer optional. Craft mocktails deserve the same attention as cocktails — complex flavors, interesting garnishes, premium presentation.
3. A story for each drink
Names like "The Velvet Hour" or "Sunset Samba" create emotional connection. A short one-line description does wonders.
4. Price anchoring
Have at least one premium option priced higher than your average. It makes everything else feel like a deal.
5. Staff knowledge
Your best menu falls flat if staff can't describe the drinks with confidence. Invest in tasting sessions and training.
